<p>I invented a recipe yesterday evening&nbsp; - I wish I'd taken a photo.&nbsp; I found huge mushrooms (about 4 inches diameter) at the supermarket, and bought two.&nbsp; They look like the organic portobello mushrooms from Tesco that you can see here: <a href="http://www.mysupermarket.co.uk/grocery-categories/Mushrooms_in_Tesco.html">http://www.mysupermarket.co.uk/grocery-categories/Mushrooms_in_Tesco.html</a>&nbsp; (wow, I'm mastering this link thing!) At home, I made a&nbsp; stuffing by removing the stalks and all the inside bits that fell away with them, and chopping those up with garlic, thyme, chives, parsley, a bit of salt and lots of freshly ground pepper.&nbsp; I then mixed it all up with an egg, and filled the big mushroom caps.&nbsp; I put three cherry tomatoes on top of each, decorated them with a couple of basil leaves, sprinkled olive oil over them, and baked them in a hot oven for about twenty minutes.&nbsp; So easy and so delicious!</p>

<p><em>I must say that having been spoilt by my Mum's Italian cooking when I was a child, I have never been able to stand shop-bought pizza (or even restaurant pizza outside Italy).&nbsp; Today I decided I had to try my fancy new induction oven, and make home-made pizza.&nbsp; It's amazingly easy - you just need to think ahead - the dough takes an hour to rise.&nbsp; Here's how to do it, for four hungry people:</em></p> <p>&nbsp;</p> <p>For the dough:&nbsp; 500 grammes plain flour (just over a pound), 10 grammes dried yeast (a couple of teaspoons), a tablespoon of olive oil, some salt, some warm water.</p> <p>&nbsp;</p> <p>For the topping:&nbsp; a couple of spoons of olive oil; a clove of garlic, peeled and chopped; about two cups of tomato <em>passata</em>; a thinly sliced courgette; a few wild mushrooms; a ball of mozzarella cheese, sliced, a few basil leaves; a chopped chilli pepper if you like it.</p> <p>&nbsp;</p> <p>The dough is just like ordinary white bread dough Make it by mixing the dry ingredients together then adding the oil and enough warm water to make a soft, springy ball.&nbsp; Use a large bowl - the dough will double in size.&nbsp; You have to knead it very well: I use those twirly things that come with the mixer - dough hooks, are they called?&nbsp; Cover the dough with greased clingfilm and leave it somewhere warm and away from drafts to rise.</p> <p>&nbsp;</p> <p>Meanwhile make a tomato sauce:&nbsp; Gently fry the garlic clove (and chilli) in the olive oil. Add the passata, cover and simmer for half an hour.&nbsp; Gently fry the courgettes and mushrooms.</p> <p>&nbsp;</p> <p>Preheat your oven to very hot (220 C - is that about 450 F?).&nbsp; When the dough has doubled in size (it takes about an hour), roll it out VERY thinly and place it on a lightly greased baking tray.&nbsp; Spread the tomato sauce over it, the the courgettes and mushrooms, and lastly the mozzarella.&nbsp; Bake for ten minutes.&nbsp;</p> <p>&nbsp;</p> <p>SQUISITA!&nbsp; (Exquisite)</p> <p>&nbsp;</p> <p>&nbsp;</p> <p>&nbsp;</p> <p>&nbsp;</p> <p>&nbsp;</p> <p>&nbsp;</p>
