A Scrumptious New Sauce

I made up a new sauce recipe the other day. It was an accident really.

The packet of Colman’s Sausage Casserole Mix said I needed mushrooms as well as onions. Unfortunately I’d forgotten to buy the mushrooms because a very large woman’s shopping trolley was blocking them on their supermarket shelf, and she was a) reluctant to move it while she made her choices, and b) quite a lot bigger than me, even with all the weight I’ve put on recently. So I moved off thinking I’d return but didn’t.

So – no mushrooms for my sauce. I looked around for inspiration and found half a sweet potato, a carrot and some leftover gravy from the day before. And there you have it.

The sausages were browned and placed in a casserole with the chopped up carrot, onions, sweet potato and some dried mixed herbs. The packet sauce was mixed with water and poured over and it went into the oven.

Once it was all cooked, I removed the sausages and mashed the sauce down with my potato masher, added the leftover gravy and reheated it. It really was scrumptious and there was sauce leftover to freeze. We had it with chicken last night, which worked equally well.

Did you ever see that dog on the Esther Rantzen show that used to say: sausages in a husky voice! It was some years ago and it was so funny. I love sausages, too!

Trevor - that sauce would go well on its own with pasta, or with quorn. better check the ingredients on the packet though if you're veggie.
