A Mexican Lasagne

I bought a packet of flour tortillas a couple of weeks ago and we had chicken fahitas. That meant 4 leftover tortillas to be used up. Yesterday I had a brainwave.

I cooked some beef mince with casserole veg, as I often do to make a stew, and I made cheese sauce. Then I layered all this with the tortillas in a long casserole dish, sprinkled more grated cheese on top and put it in the oven to melt the cheese and brown a little. It made a great Mexican lasagne. Hubby and I could only eat half of it, and the rest is in the freezer till we fancy it again.
