Vegetable cous cous

Low in cholesterol!

I chopped onion
2 chopped cloves of garlic
Vegetable stock
1 red pepper, chopped into chunks
1 yellow pepper, chopped into chunks
1 aubergine, chopped into chunks
1 courgette, chopped into chunks
2 tsp cumin
1 tsp chopped fresh chili pepper
1 tsp turmeric
1 inch chopped fresh ginger
1 tin tomatoes, chopped (the tomatoes, not the tin)
150 grammes cooked chick peas (soak overnight then simmer for an hour or so with a bayleaf)
Salt and pepper
Fresh coriander

• Fry the onion and garlic
• Add a bit of stock and all the vegetables (not the chickpeas) and simmer till soft
• Add the spices, tomatoes, chickpeas and a bit more stock.
• Simmer a little while longer
• Decorate with fresh coriander at the last minute

Make instant couscous at the last minute
