Could someone explain to me, please, why Team GB is not called Team UK? Thanks.

I just checked up on this Paola.
Great Britain is the primary British island consisting of England, Scotland & Wales. Along with Northern Ireland, it becomes the United Kingdom.
The Olympic team title comes from the official name of the team which according to the IOC is Great Britain & Northern Ireland. But no one seems to know why it's so called.

It really should be called Team UK since it includes Northern Ireland athletes.

The UK is Great Britain and Northern Island.
So the British Olympic Committee have not been logical. Perhaps this is because they are sportsmen/women.

Because there's no king and it's not united? or maybe it's a subtle piece of psychological one-upmanship and morale-building to label the team great.
