Lentil Salad

Have you browsed my recipe category? It's filled with lots of ideas, and there's plenty there for vegetarians too, as I have two in my immediate family and lots in my extended family. Try this one:

Lentil Salad

This is one of my favourites - you can add loads of things to it - it's delicious with fresh sweetcorn, chopped coriander, and you can brighten it up with red and yellow peppers .

Ingredients:

• 400 g lentils
• 2 large green peppers
• 3 sticks celery
• 1 bunch spring onions
• 1 bunch parsley
• 1 onion
• 50 g sunflower seeds

For dressing

• 6 tbsp olive oil
• 3 tbsp red wine vinegar
• 2 tbsp lemon juice
• 4 cloves garlic, pressed
• salt and freshly milled black pepper

Method:

1. Boil the lentils in salted water for 30 minutes, then drain
2. Chop peppers, celery. Spring onions, parsley, onion
3. Roast sunflower seeds in a dry pan for 2 minutes
4. Mix the lentils, chopped vegetables, and sunflower seeds in a bowl
5. Put all the dressing ingredients in a jar and shake to mix
6. Mix the dressing with the salad
7. Season with salt and pepper
