Chilli sin Carne (veggie chilli)

Chili sin carne
(4 servings)

This is a deliciously healthy winter dish: I often add fresh sweetcorn to it.

Ingredients

1 tbsp olive oil
1 peeled chopped
1 chopped red pepper
1 crushed clove garlic
400 gr (1 tin) peeled chopped tomatoes
225 gr cooked red kidney beans
100 gr cooked green lentils
1/2 tsp chilli powder
Salt and pepper
Pinch of sugar
Fresh coriander to garnish

Method

1. Heat the oil in a big pot and fry the pepper and onion for 10 minutes.
2. Add the garlic and tomatoes
3. Add the beans, lentils, and chilli.
4. Add a little water.
5. Simmer for 15 minutes.
6. Add salt, pepper and sugar.
7. Serve garnished with chopped fresh coriander.

Funny, I made it the day before yesterday, and yesterday mixed the leftovers with a bolognese sauce and had it with pasta - it was good!
